Located in the wonderful region Allgäu, the brand Gebr. Baldauf stands for premium cheese specialties entirely made out of pure, natural hay milk. Their legacy began as early as 1862 

The long maturing period gives this semi-hard cheese made from fresh hay milk its extraordinary, full taste - melt-in-the-mouth on the palate, strong in the aftertaste. The fine red smear rind can be eaten and provides additional spicy accents. With its creamy, melt-in-the-mouth consistency, this semi-hard cheese is reminiscent of mountain cheese that has matured for a longer period of time.
